Peach and pesto pizza

Pizza is a quite basic dinner, we (I believe) all love having a nice slice of a delicious cheesy pizza with our favourite toppings! The pizza that we have ordered on our way home, brought by the delivery driver just when we arrive is one of the best because we haven't spent ages in the kitchen to make it.

That being said, sometimes we also want a more classy pizza, a "gourmet" pizza, in this case you can either go to a restaurant or make it yourself. I choose to make it myself, and I hope you will choose this option to when you'll have read the recipe of one of my favourite homemade pizza.



Ingredients for the pizza

4 peaches

100g (½ cup) pesto

Pizza dough homemade or store-bought

5 slices of prosciutto

Salt

Pepper

75g (2.25 ounces) mozzarella


Ingredients for the sauce

30g (⅛ cup) honey

40g (⅛ cup) balsamic vinegar

Pepper


Preheat the oven at 200C or 390 F

Roll out your pizza dough.

Place it on a baking rack lined with parchment paper.

Spread pesto on it.

Wash and slice the peaches (12 or 16 slices in a peach, the slices should not be too thick)

Cut the prosciutto’s slices into small pieces.

Heavenly distribute prosciutto on the pizza.

Repeat with the peaches’ slices.

Season with salt and pepper.

Place in the oven for 15 to 20 minutes.


While the pizza is baking, wash and dry the baby spinach.

Combine honey, balsamic vinegar and pepper.

Cut in cube the mozzarella.


Once the pizza is baked, put the mozzarella on it and let it set for 5 minutes in order for the mozzarella to melt a little.

Then sprinkle with baby spinach and drizzle some sauce on the pizza.

Immediately serve with a nice arugula salad.
