Quinoa and green vegetables salad

I fell in love with this green veg and quinoa salad the first time I ate it! You must absolutely try before the end of summer. Here is why, first it is super easy to make, thus you can make it as packed lunch for work or school. It is full of vitamins, nutrients that are good for your health and it is super filling.
Ingredients
250g of quinoa
200g of green beans
150g of snow peas
200g of peas
1 egg yolk
1 tablespoon of mustard
10ml of olive oil
1 garlic clove
Salt and pepper
4 tablespoons of apple cider vinegar
Method
Start by washing the quinoa.
Then cook the quinoa. To do so place the quinoa in a large casserole, top it with twice its volume in water.
Add salt and bring to a boil.
Let it boil for 7 minutes.
Remove for the heat, cover with a lid and allow it to rest for 15 minutes.
Meanwhile cook the vegetables.
Bring a large pot of salted water to a boil, cook snow pea and green beans for 10 minutes.
Once the vegetables are cooked rinsed them with very cold water.
Allow them to cool.
Repeat for the peas.
While all the vegetables and the quinoa are cooling, make the sauce.
In a blender, mix oil, garlic, egg yolk, salt, pepper, mustard and mustard.
If the sauce is too thick add a little bit of water.
In a large bowl, carefully combine all the vegetables, the quinoa and the sauce.
The salad is ready to serve.
