Dairy free Banana Bread

I don’t know why but in my family when we buy bananas we always end up with 3 overripe bananas that no one wants to eat. They just sit there on the kitchen countertop.
It’s true that overripe bananas don’t taste good at all when they are raw. However we don’t want to throw them in the bin because it’s food waste and that’s something we try to avoid as much as possible.
Obviously no one would eat them as they are hence I made myself up a little list of recipes I can do with them.
Today I am sharing you one of those recipes: my healthy banana bread, that I love to top with some stewed berries.
Ingredients
3 ripped bananas
200g all purpose flour
2 teaspoons baking powder
1 pinch of salt
2 eggs
100g honey
10mL milk (non dairy or not as you wish)
25g of slivered almonds
Method
First preheat your oven at 180°C.
Mash up the bananas using a fork.
In a mixing bowl, wisk the eggs with the honey and the pinch of salt.
Add in the mashed bananas, flour and baking powder.
Mix everything until well combined.
Spray cake mold, littly dust it with flour.
Pour the batter in the mold, sprinkle the slivered almonds.
Bake for 35 minutesn or until a toothpick inserted in the middle comes out clean.
Once the banana bread is done baking, allow it to cool a little before removing it from its mold.
If you want, you can do like me : while the banana bread is cooling, put a few handfuls of frozen or fresh berrie in a small sauce pan. Put it on the stove on medium low heat, cook for 10 to 15 minutes with the lid on.
Serve the banana bread topped with some stewed berries.
