Pita bread salad

On their way back from school let your kids buy some pita breads, a bunch of mint and a lemon to make them this very quick yet delicious dinner for back to school week.
This week is very tiring in my family, everyone is trying to get back into “school or working mode” and it’s hard to find time to make dinner whilst trying to keep myself up to date with all the new activities in my family schedule. I came up with this super easy recipe for this time of the year when you don’t want to spend ages in the kitchen cooking but that you still want to eat homemade healthy food.
Ingredients
pita breads ( count one half to a full bread per person)
4 tomatoes
½ cucumber
1 cup of sweet corn
3.25 oz feta cheese
1 greek yogurt
1 bunch of mint
1 lemon
salt and pepper
Wash and dry all the vegetables.
Dice the tomatoes and the cucumber.
Rinse the sweet corn.
Place each ingredient in its own bowl.
Mix together greek yogurt, the juice of half the lemon along with salt and pepper.
Chisel a handful of mint then add it in the yogurt sauce.
Place the feta cheese on a small plate, crumble a little of it.
Heat the pita breads by placing it a couple minutes in a panini maker or in your toaster.
Once the pita breads are warm serve them immediately.
Put all the bowls and plates your dining table and let everyone help themselves.
