Vegan berry cake

How about trying a vegan cake and finding out that it actually tastes like regular cake?

This week, I challenge all of you to bake this cake and make your family or your friends taste it without telling them that the cake is vegan. I'm sure most of them won't notice anything different.


Ingredients

1 cup Non-Dairy milk

1 tablespoon apple cider vinegar

1 & ½ cup all purpose flour

⅔ cup coconut sugar

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon nutmeg

½ teaspoon allspice

½ teaspoon salt

⅓ cup canola oil

1 teaspoon lemon juice

1 teaspoon vanilla extract

1 cup frozen berries


Preheat the oven at 180C or 350F

Whisk together milk and vinegar, set aside.

In a large bowl, mix together all the dry ingredients ( flour, sugar, baking powder, baking soda, cinnamon, allspice, nutmeg and salt)

Add canola oil, lemon juice and vanilla extract to the milk and vinegar mixture.

Then pour the wet ingredients little by little in the dry ingredients, mixing well between each add.

Spry a cake tin and flour it.

Pour the batter in the tin.

Sprinkle the frozen berries on the batter.

Bake the cake 15 minutes or until a toothpick inserted in the center comes out clean.

Let the cake cool before you remove it from form its pan.
