Eggplant, cherry tomatoes, arugula pizza

Sometimes I just feel like having a nice slice of pizza. Tonight as one of those nights, I wanted a delicious yet healthy-ish slice of pizza. I headed to my fridge and found an eggplant, some cherry tomatoes and some leftover Parma ham. With those ingredients and some fresh basil from my garden I made myself a very nice pizza.



Ingredients

1 pizza dough

5 tablespoons tomato sauce

10 cherry tomatoes

1 eggplant

2 handfuls of arugula

4 slices of Parma ham

Fresh mozzarella

1 bunch of basil


Prepare the pizza or unroll it if you bought it store bought.

Wash all the vegetables.

Slice the eggplant horizontally.

Steam 4 eggplant slices in your steamer for about 5 minutes.

Meanwhile, spread the tomato sauce on the pizza dough.

Halve the cherry tomatoes.

Remove the excess fat of the ham.

Strain the water from the mozzarella.

Once the eggplant slices are cooked arrange them on the pizza dough.

Add the cherry tomatoes.

Pop in the oven for 15 minutes.

When the pizza comes out from the oven, put the mozzarella on it.

Allow the mozzarella to melt for about 5 minutes.

Then sprinkle arugula and basil on the pizza.

Top everything with the Parma ham slices.
