Fall is here! This apple cinnamon crumble cake will help you to forget summer. I consider it as one of my best autum comfort food as it is easy to make, it only requires simple ingredients that I always have in my pantry and that it is super delicious!

Ingredients for the cake

100g butter

2 cups all purpose flour

1 teaspoon baking soda

1 tablespoon cinnamon

1 teaspoon nutmeg

½ teaspoon salt

¼ cup packed brown sugar

2 eggs

⅓ cup maple syrup

1 cup Greek yogurt

1 teaspoon vanilla extract

1 apple cored and diced small

Infgredients or the crumble topping

3 apples washed, cored and sliced

¼ cup brown sugar

¼ flour

¼ cup cold unsalted butter

¼ cup chopped walnut

1 teaspoon cinnamon

Start by preheating the oven at 180C or 360F

Mix all the dry ingredients in a bowl ( flour, baking soda, nutmeg, cinnamon, salt)

Cream butter and sugar with your stand mixer.

Once the batter has become lighter in texture and color add one egg at a time, beating between each egg.

Then set your mixer on low and add alternatively Greek yogurt, dry ingredients, maple syrup and vanilla extract.

When you’ve added all the ingredients, fold in the apple and give the batter a final mix.

Pour your batter in the pan you’ve chosen ( don’t forget to lightly grease it)

Now make the crumble topping.

Mix all the ingredients except from the apple in a bowl. You should end up with a nice coating of your walnut with a sandy texture around it.

Evenly distribute this mixture on your cake, top with the apple slices.

Put in the oven for 35 minutes or until a toothpick insert in the middle comes out clean.

Allow it to cool before unmolding it.

Eat it slightly warm on it’s own or with yogurt ice cream.
