Pumpkin pie

Today I share with you one of my favorite pie recipe: pumpkin pie! It reminds me of when I was living in the US.

This recipe is not the classic version, as the filling is dairy free.

I hope you will enjoy making and eating this pie!

Get creative with the decor!

Ingredients for the short crust pastry

200g (1⅔ cup) flour

75g (⅓ cup) butter

5g (1 tbsp) coconut sugar

1 egg

1 pinch of salt

1 glass of water (it’s normal if you don’t use it entirely)


Ingredients for the filling

1 ⅓ cup pumpkin purée

1.13 ounces almond milk

½ cup coconut sugar

2 eggs

2 teaspoons pumpkin spices

½ teaspoon salt


In a large bowl mix together flour, salt and coconut sugar.

Add the butter cut into small cubes.

Use your hand to crumble the butter in the flour. Do it until you have a sandy like texture.

Add the egg.

Then add a little bit of water while mixing with your hands.

Add more water and repeat until you get a firm, non-sticky dough.

If it’s too sticky add flour.

Wrap it with a plastic wrap and allow it to sit for at least one hour in your fridge.

When you are ready, preheat your oven at 200°C or 390°F roll out your dough quite thin (about 5 millimeters of thickness)

Line a tart tin with it and place parchment paper on it.

Put some weights ( lentils, rice) on the parchment paper.

Bake for a first session of 10 minutes then remove the parchment paper and the weights and cook for an additional 10 to 15 minutes. The edges and the bottom of the crust should be a bit golden but not burnt.


Whisk the eggs with the almond milk in a jug.

In a large bowl combine pumpkin purée, coconut sugar, spices and salt.

Pour the egg mixture in the pumpkin mixture.

Mix everything well.

Pour this batter in the pie shell.

Bake for 10 minutes at 410°F (210°C) then 30 minutes at 360°F (180°C).

Optional*When the pie comes out of the oven, display the decorations you made on the pie.*

Allow the pie to cool a little before serving it.


If you want to make decorations, use some leftover pie dough to create some leaves or any shapes that you want.

You just have to brush them with some egg yolks before baking them 7 minutes at 360°F (180°C).
