Pulled Pork Tacos with mango salsa

Who likes tacos? Me definitely! Yet I am bored of regular tacos, hence I often try new tacos flavors. This weekend, I prepared those pulled pork tacos with a very nice mango salsa. I marinated the pork with some orange juice and zest, the taste of this citrus gives an unusual yet delightful kick to the meat. I was afraid that the mango salsa would be too sweet compared to the pork but the red pepper flakes, the salt and the lime juice relieved the sweetness of the mango. Thereby, the pork and the salsa paired perfectly.



Ingredients for the meat:

500g pork neck

1 orange ( juice + zest)

½ teaspoon red pepper flakes

½ teaspoon ground cilantro

½ teaspoon cumin

¼ teaspoon ground clove

50ml water

1 teaspoon salt


Ingredients for the mango salsa:

1 mango

½ lime

½ teaspoon red pepper flakes

Salt

Pepper


To serve:

Mini tortillas

Pickled onions

Avocado

Arugula


Preheat the oven at 160C/ 320F.

Cut the pork neck into thick chunks.

Mix together all the spices along with the orange juice, 1 teaspoon of orange zest and the water.

Transfer the pork chunks to a dish.

Pour the spices mixture over the pork chunks.

Place the dish in the oven for 2 hours, covering with foil after 1 hour.

While the pork is cooking, dice the mango.

Squeeze the juice of half a lime.

Place the mango in a bowl, add red pepper flakes, the lime juice as well as some salt and pepper.

Once the pork is out of the oven, allow it to sit for 10 minutes before shredding it.

Heat the mini tortillas in the oven, this should take about 10 minutes at 100C.

Serve the pulled pork with the mango salsa and the mini tortillas along with some pickled red onions, some avocado slices and some arugula.
