Fig and pistachio cake

Here is a nice cake recipe which reminds me of summer but calling for fall ingredients! Hope you will like it as much as I do!



Ingredients for the cake batter

2 cups flour

2 teaspoon baking powder

½ teaspoon salt

2 teaspoons cinnamon

½ cup sugar

⅓ cup honey

¼ cup vegetable oil

3 eggs

1 teaspoon vanilla extract

½ cup espresso ( cooled but not cold)


Ingredients for the topping

200ml whipping cream

200g mascarpone

10 figs

A handful pistachios


Start by preheating the oven at

Mix all the dry ingredients in a bowl.

In another bowl mix all the wet ingredients.

Add little by little the wet ingredients in the dry ingredients, making sure everything is well combined before adding more.

Spray a pan and cover it with flour.

Pour the batter in the pan.

Place in the oven for 30 minutes or until a toothpick inserted in the center comes out clean.

Allow the cake to cool completely before going further.

Whisk the cream until soft picks form then add the mascarpone and continue whisking .

Wash the figs, half some and quarter the rest.

Roughly chop the pistachios.

Spoon the cream mixture on top of the cake.

Display the fig on top then sprinkle pistachios.

Keep the cake in the fridge until 10 minutes before serving.
