Homemade Marshmallow and S'mores

It has been some time now that I’ve wanted to make marshmallows. A couple weeks ago, I tried for the first time, it was not a success but I kept trying, and I’ve eventually came up with the best recipe for homemade marshmallows. When I finally made perfect marshmallows, I was so happy that I needed to make something great with them instead of just eating them whenever I had a sugar craving. That’s how I decided to make some s’mores!



Ingredients

5cL of water

125g of castor sugar

25g of honey

2g of gelatin

2 eggs whites

25g of icing sugar

25g of maïzena


Method

In a small saucepan, heat water, sugar and honey until it reaches 121°C.

Meanwhile, soften the gelatin in cold water.

Whisk the egg white with a stand mixer until they are a little bit fluffy.

Once the mixture reaches 121°C remove from the heat and mix in the gelatin.

Then add this hot mixture little by little in the egg whites while you continue to whisk them.

Whisk the egg whites until they have completely cooled.

Mix together maïzena and icing sugar.

Sift a quarter of it on a baking tray lined with parchment paper.

Pour the egg whites mixture on the baking tray.

Sift another quarter of the sugar/maïzena mixture on top of the marshmallow.

Allow the marshmallow to rest for at least 6 hours.

Once the marshmallow « dough » is not too sticky when you touch it and that it bounces back when you softly press it, you can cut into cubes .

Roll those cubes in the remaining sugar and maïzena powder.

Place them in an airtight container in order to prevent them from drying.

You can keep them up to a week.
