Pesto, zucchini and sundried tomatoes pizza

Should we have a reason to make pizza? That’s a question I often ask myself… I’ve concluded that no! I can make a healthy or not healthy ( it happens) pizza whenever I was craving one. I created this pizza as a reminder of summertime when the evenings are warm, there is fresh colorful vegetables at the farmer market. In short, it is a summer in a mouthful.


Ingredients

1 pizza dough

1 jar of pesto

10 sundried tomatoes

1 mozzarella cheese

1 small zucchini


Method

Start by preheating your oven at 200°C

Roll out pretty thinly your dough.

Transfer it on a baking tray.

Evenly spread the pesto on top of the dough.

Bake for 15 minutes.

Meanwhile, cut the mozzarella into cubes and the sundried tomatoes in smaller pieces.

Wash the zucchini, then using a vegetable peeler, create ribbons with the zucchini.

Once the dough comes out of the oven, place the mozzarella on it.

Put it back in the oven for 10 minute.

Then arrange the zucchini ribbons and the sundried tomatoes on the pizza.

Bake for a final 5 minutes.

Eat the pizza right away!
