Oven baked vegetables and spicy meatballs

What if you take some time next weekend to make a healthy tasteful and balance main for yourself ( and your family)... If you decide to do so, I have a nice recipe for you: spicy meatballs with baked bell peppers and chickpeas, and if you feel like doing something extra serve this meal with a fresh Libanese tabbouleh.



Ingredients for the meatballs

500g of ground meat

½ onion

1 garlic clove

1 teaspoon of salt

3 teaspoons of tabasco

1 tablespoon of olive oil

1 tablespoon of sparkling water


Ingredients for the vegetables

500g of canned chickpeas

6 bell peppers ( 3 red and 3 yellow)

1 red onion

1 teaspoon of couscous spices

1 tablespoon of olive oil

Salt and pepper


Method

Start by preheating your oven at 200°C.

Dice the onion.

Crush the garlic

Mix onion, garlic, ground meat, tabasco, olive oil, salt and sparkling water.

Place the mixture in your fridge.


Meanwhile, wash bell peppers.

Drain chickpeas and rinse them.

Deseed bell peppers, then slice them into strips.

Roughly dice red onion.

Place bell pepper, chickpeas and onion on a baking tray.

Season with salt, pepper, couscous spices and olive oil.

Mix well.

Bake for 15 minutes.


While, the vegetables are baking, form the meatballs.


Once the 15 minutes are over, display the meatballs on the vegetable.

Put the baking tray back in the oven for 10 minutes.
