Crunchy-Fudgy Bites

Today I’m sharing the recipe of a nice treat for sugar cravings! It won’t take much time to make and you can keep it a couple weeks in a box for when you want a snack or just to eat with coffee or tea.
Ingredients
50g of puffed rice
50g of skinned almond
50g of skinned pistachios
50g of Brazil nuts
35g of shredded coconut
225g of dark chocolate
50g of candied orange peel
50g of dried apricot
1 pinch of salt
Method
Roughly chop the Brazil nuts.
In a pan over high heat, toast all the nuts.
When the nuts are almost done add in the shredded coconut.
Keep mixing until the coconut is golden brown.
Remove the pan of the heat.
Melt the chocolate on a double boiler.
Meanwhile, dice the dried apricot.
Once the chocolate is melted, add the nuts, the puffed rice, the candied orange peels, the dried apricot cubes and a pinch of salt.
Mix thoroughly making sure you don’t apply too much pressure, it would break the puffed rice.
Pour the mixture on a baking tray lined with parchment paper.
Allow the mixture to rest at least 3 hours.
When the mixture has hardened, cut it into pieces.
Display the bites in a box which you can close with a lid.
Enjoy with coffee or tea (or as a snack!)
