Gazelle Horns

One of my dream is to travel in Northern Africa to have a taste of traditional dishes… As I can’t do this for the moment, I make myself some of the goodies I hope I’ll have the chance to taste one day. One of my favorite treat are gazelle horns. I’ve fallen in love with the delicate combination of almonds and orange blossom. I must say that one of the best part of those pastries besides them being like a taste of heaven, is that when the gazelle horns bake the smell of orange blossom spreads in my whole appartement!
Ingredients for the dough
200g flour
100mL orange blossom water
50g canola oil
1 pinch of salt
Ingredients for the filling
250g ground almonds
80g powdered sugar
2 tablespoons of orange blossom water
Method
Combine flour, salt, orange blossom water and canola oil using a wooden spoon.
When you almost have a dough, use your hand to form a soft ball.
Place the dough in the fridge for 15 minutes.
Meanwhile, combine the ingredients for the filling.
Preheat your oven at 180°C.
Roll out thinely the dough on a lightly floured surface.
Using your hands, form small sausage-shape like rolls with the filling.
Place one roll on each dough circle then wrap the dough around the filling.
Place the gazelle horns on a baking tray lined with parchment paper.
Bake for 10 minutes, the gazelle horns should not be golden.
Immediately roll the gazelle horns in powdered sugar.
Let the gazelle horns cool down before eating them.
Keep them in an airtight container until they are all eaten!
