Chorizo meatballs with roasted tomatoes

I used to hate meatballs, I found them either too dry or though fatty or even worse the meat wasn’t ground properly and I found chucks in them… to put it simply : I wasn’t keen on meatballs. But I tried this recipe a couple weeks ago and I really appreciate it thus I've decided to share it with you.



Ingredients for the chorizo meatballs

600g of ground beef

250g of chorizo

60g of breadcrumbs

3 tablespoons of milk (dairy or non dairy)

1 egg

1 garlic clove

½ a red onion

2 teaspoons of ground cumin

½ teaspoon of red pepper flakes

1 teaspoon of dried herbs


Ingredients for the roasted tomatoes

8 tomatoes

½ a red onion

1 tablespoon of dried herbs

Salt and pepper to taste


Method

Preheat you oven at 220°C.

Cut each tomatoes into quarters.

Mince the onion.

Place tomatoes and onion in a large ovenproof dish.

Sprinkle some salt, pepper and dried herbs.

Drizzle some olive oil.

Place in the oven for 45 minutes.

Meanwhile let’s make the meatballs.

Start by very thinly mincing garlic and onion.

Cook onion and garlic in a small pan with a bit of olive oil.

In a large bowl, combine egg, milk, spices and breadcrumbs.

Add in the ground beef and the ground chorizo.

Mix well all ingredients are combined.

Now form meatballs by rolling between your palms some of the mixture (you can use an ice cream scoop to make sure you have even meatballs)

Place the meatballs on a baking tray lined with parchment paper.

Place the tray in the oven for 10 minutes.

By now, the tomatoes should be cooked, so remove them from the oven and allow them to rest a little so it can cool a bit.

Once the meatballs are cooked through, remove them from the oven.

Serve the chorizo meatballs with the roasted tomatoes and if you want you can add rice to the plate.
