Puffed quinoa and banana granola

Quite a long ago I shared a recipe of oats, cranberries and pumpkin seeds granola, today I’m sharing another granola recipe. This one is more crunchy thanks to the puffed quinoa which are added to the mixture. Moreover, this recipe is great not only for those moments when you have overripe bananas with which you don’t know what to do, but it’s also great for people who want to eat healthy threats. Indeed, you can have yogurt topped with fruits and this awesome granola as a snack.



Ingredients

1 cup rolled oat

½ cup puffed quinoa

1 ripe banana

1 pinch of salt

½ teaspoon of cinnamon


Preheat your oven at 140°C.

Mash up the banana in a large bowl.

Add in salt and cinnamon.

Mix well.

Add rolled oat and puffed quinoa.

Stir everything making sure not to over mix.

Transfer the mixture on a baking tray lined with parchment paper.

Evenly spread the mixture on the tray.

Bake for 30 minutes mixing every 10 minutes.

Once the granola is golden brown and dry remove from the oven.

Allow the granola to cool before placing it in an airtight container.
