Spicy chicken and bell pepper sheet pan

Today I share with you a quick yet absolutely delicious recipe of roasted chicken with spicy vegetables that you can as In like to do serve with rice. This recipe is very convenient as first you can prep all the ingredients before (cut the vegetables mainly) and keep then in your fridge, ready to be cooked when you want. Also, it is very convenient as you can make some plain vegetables and chicken for your kids and some spicy ones for you, so you can jazz up your meal while not having to bother about your kids not eating anything.


Ingredients

5 chicken thighs

3 bell peppers

1 red onion

1 teaspoon red pepper flakes

1 teaspoon ground cumin

½ teaspoon chili powder

2 teaspoons salt


300g rice


Method

Start by washing the bell peppers.

Then peel the onion, cut it into wedges.

Cut the bell peppers in half, remove the seeds.

Cut them into strips.

Mix salt, red pepper flakes, chili powder and ground cumin together.

Place the bell peppers, onion and chicken thighs on a sheet pan.

Sprinkle the spices on the vegetables and chicken.

Use your hands to heavenly distribute the species and to make sure vegetables and chicken are well coated.

Place in the oven for 30 minutes.

Meanwhile cook your rice.

Once both the rice and the chicken are cooked, serve everything together. If you want some extra spiciness you can add some sriracha.
